Leaf Tea is really versatile and rich and besides its classic use in Infusion you can use it in cooking. Savory and sweet, moving to fresh foods to those ideal in winter to warm us up, we want to have fun with you and that’s why today we are going to talk about desserts. How about starting with some fluffy Matcha Tea cupcakes? We’ll continue with a fragrant Tea Cake using intense Earl Grey and we’ll end on a crunchy note with some light and tasty Assam Tea Shortbread.

Matcha Tea Cupcakes

Ingredients:

  • 110g 00 flour
  • 110g sugar
  • 80g seed oil
  • 2 large eggs
  • 10g matcha green tea
  • 5g baking powder

Let’s prepare them together:

  • Combine the 00 flour with the baking powder, sugar and Matcha Tea and mix well.
  • Preheat the oven to 190°.
  • Add the seed oil to the eggs and work the mixture with an electric beater until smooth and lump-free.
  • Transfer the ramekins to the molds.
  • Transfer the batter into the ramekins, remembering to put in an amount that is less than a tablespoon.
  • Bake for 20 minutes.
  • Before decorating, let them cool on a tray for at least 10-15 minutes.
  • You can indulge in decoration, using powdered sugar, Japanese Green Tea or pralines.

Earl Grey Flavored Tea Cake

Ingredients:

  • 3 eggs
  • 180g sugar
  • 60g butter
  • 160ml water
  • Two teaspoons of earl grey
  • 300g flour
  • 16g baking powder
  • Lemon peel

Let’s prepare it together:

  • Prepare your Earl Grey in advance as directed on our website and on the label of its package and let it cool.
  • Whip the three eggs with the 180gr sugar together until foamy.
  • Add the Earl Grey, melted butter, flour, baking powder and lemon zest. Whisk everything together thoroughly.
  • In a previously buttered and floured cake pan, pour the ingredients.
  • Bake at 180° for 30 to max 35 mins.

Once baked, let it cool and decorate with a little powdered sugar.

Assam Tea Shortbread

Ingredients:

  • 190g buckwheat flour.
  • 80g brown sugar
  • 25g rice oil
  • 80g Assam Tea (We recommend you prepare it at least two hours in advance so it cools).
  • One bar of dark chocolate to cut into chips.

Let’s prepare them together

  • Sift the buckwheat flour, sugar and chocolate chips.
  • Pour in the rice oil and mix, helping with your hands.
  • When it’s smooth, add the Tea and, if necessary, more flour.
  • The dough should stay in the fridge for at least 50 minutes after being wrapped in a plastic wrap.
  • After the 50 minutes has passed, you can take the dough and knead it a few more minutes until it forms a sausage, wrapping it in baking paper and closing the two ends tightly. Let it rest another 30 minutes but this time in the freezer.
  • Take the dough and cut it carefully into slices. Once more, place your cookies on a baking sheet covered with parchment paper and refrigerate for an additional 15 minutes.
  • Now it’s time to start baking. 15 minutes at 180 degrees in the preheated oven.
