Panna cotta with matcha
Did you know that panna cotta is one of the most beloved Italian desserts in the world? I read about it on an Assolatte research and said to myself, I have to try it too! I don’t like it very much as a dessert, so even though it is a classic of the Italian tradition, I had never tried to make it… but I have to say that this recipe I created is not bad… it may be the cream, it may be the matcha, but that’s how I love panna cotta!
Ingredients
(for 4 people)
- a tablespoon of matcha tea
- 500 ml of cream
- 100 g sugar (1 1/2 cups)
- 1 sheet of isinglass
- about 1 teaspoon of vanilla essence
- half a glass of milk
To prepare the matcha panna cotta, start by soaking the isinglass in cold water for 10 minutes.
Meanwhile, dissolve the matcha tea in half a glass of milk. Stir thoroughly so that no lumps remain.
In a small saucepan combine the milk with the matcha, sugar, vanilla essence and cream. Stir and bring almost to a boil.
At this point the 10 minutes of soaking the isinglass in cold water will have passed. Squeeze out the sheet and add it to the rest of the mixture, taking care to mix everything well.
Pour into pastry molds and let cool out of the refrigerator (never put hot things in the refrigerator!). Once the panna cotta is cold, refrigerate for a couple of hours and serve. I had picked some blueberries a few days before and added them as a garnish (I love pairing matcha with berries), you can add whatever you like…chocolate sauce isn’t bad on this matcha panna cotta either
