What is matcha tiramisu made of?
Tea is a special ingredient in the kitchen, and one of my favorite recipes is matcha green tea tiramisu, a fresh, easy and quick-to-make dessert that is ideal for sharing with friends.
Matcha tiramisu recipe
- matcha green tea powder
- 3 cups of Japanese bancha or sencha green tea (about 600 ml)
- 3 eggs
- 5 tablespoons of sugar
- 500 g mascarpone cheese
- 250 g ladyfingers (pavesini or savoiardi biscuits).
The egg whites and yolks should be separated.
The sugar and egg yolks should be whipped until foamy. To create a cream, stir in the mascarpone.
Whip the whites until stiff by adding a pinch of salt.
Prepare bancha or sencha green tea (read more about it here) by letting it steep 3 minutes and let cool.
Soak the pavesini in the tea, one at a time and arrange them in the baking dish or single-serving cup until they form an even layer. Cover with a generous layer of cream. Dust the surface with matcha green tea powder.
Repeat the process.
Before serving, let the food cool in the fridge for at least two hours. Even better if prepared in advance and left in the refrigerator half a day or overnight.
My advice? Serve the dessert with a sencha prepared from the cold brew.
