How Do you make Earl Grey Cookies?
If you feel like experimenting with a sweet recipe involving tea as a secret ingredient but do not have the ability to go to a specialty store to procure particular teas then just go to the supermarket and buy a great earl grey tea and try fragrant earl grey tea cookies with me.
Earl grey tea is tea flavored with bergamot oil. Nowadays you can also find variants of earl grey tea based on green tea but in this case, I chose the classic earl grey based on black tea. This drink carries Italian notes as bergamot is a citrus fruit that originated in Calabria (Italy) and whose production is still 90 percent Calabrian.
Difficulty: low
Total time: 55 min approx.
Baking: 15 min in the oven at 180°C
Ingredients:
(for about 15 cookies)
- 100 gr cake flour
- 8 gr vanilla baking powder
- 35 gr brown sugar
- 30 gr butter (unsalted)
- 45 ml milk (lactose-free in my case)
- 1 tablespoon earl grey tea
Procedure:
- Take a bowl and start combining the flour, baking powder and sugar.
- If you have earl grey tea in a bag, open the bags and if the leaves are too big chop them with a mixer so that they become powder. The tea leaves I bought were not very large so I added them directly to the mixture.
- Melt the butter in a small saucepan over low heat and when it is liquid, or almost liquid, add it to the other ingredients and stir.
- Now add the milk and create an even mixture.
- Now take some plastic wrap (about 30 cm) and spread it out on the table. Take the mixture and with your hands create the shape of a roll, place it on the clingfilm and wrap it like a candy.
- Now place the roll in the refrigerator and let it rest for 30 minutes.
- Turn on the oven to 350°F (180°C).
- Once the 30 minutes have passed, lay some baking paper on a baking sheet, take the mixture out of the clingfilm, and start cutting it into slices of about half an inch adjusting the shape as you prefer and lay them on the baking paper.
- When you have finished cutting the mixture and have placed all the resulting discs on the baking paper, wait until the oven reaches 180°C and bake for 15 minutes.
- The earl grey tea cookies are now ready, let them cool a few minutes and enjoy!

Notes
These simple, fragrant cookies are perfect either for breakfast with a cup of milk or a cup of tea (for the real fans) or as a snack at a time of your choosing. Remember that since they contain tea it would be best to avoid consumption in the evening as you may then have trouble sleeping.
